Ingredients

  • 2 lb boneless, skinless chicken breasts, halved crosswise
  • ½ cup sugar free orange marmalade
  • 3 Tbsp soy sauce
  • 2 tsp minced garlic
  • 2 Tbsp olive oil

Instructions

  1. Pound chicken to an even thickness between plastic wrap using a meat mallet.
  2. Stir together marmalade, soy sauce, and garlic in a small bowl.
  3. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until done, basting often with marmalade mixture.

  • 2 (8-oz) pkg thin green beans
  • 1 pint grape tomatoes
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer.
  2. Bake 15 minutes or until beans are browned and tomatoes are softened.
