Ingredients
- 2 lb boneless, skinless chicken breasts, halved crosswise
- ½ cup sugar free orange marmalade
- 3 Tbsp soy sauce
- 2 tsp minced garlic
- 2 Tbsp olive oil
Instructions
- Pound chicken to an even thickness between plastic wrap using a meat mallet.
- Stir together marmalade, soy sauce, and garlic in a small bowl.
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until done, basting often with marmalade mixture.

- 2 (8-oz) pkg thin green beans
- 1 pint grape tomatoes
- 2 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer.
- Bake 15 minutes or until beans are browned and tomatoes are softened.
