Zucchini-Chicken Casserole

Ingredients
- 2 (10-oz) pkg zucchini spirals
- 3 cups shredded rotisserie chicken
- 1 pint grape tomatoes
- 1 (10.5-oz) can cream of chicken and mushroom soup
- 1¼ cups shredded Parmesan cheese, divided
- ¾ cup panko breadcrumbs
- ¼ cup butter, melted
Instructions
- Preheat oven to 425°F. Cook zucchini according to package directions in microwave; drain well.
- Combine zucchini, chicken, tomatoes, soup, and 1 cup cheese in a large bowl. Pour mixture into a greased 11- x 7-inch baking dish. Sprinkle with ¼ cup cheese.
- Stir together breadcrumbs and butter. Sprinkle over casserole. Bake 15 minutes or until top is lightly browned.

- ⅓ cup olive oil vinaigrette
