Ingredients

  • 2 (10-oz) pkg zucchini spirals
  • 3 cups shredded rotisserie chicken
  • 1 pint grape tomatoes
  • 1 (10.5-oz) can cream of chicken and mushroom soup
  • 1¼ cups shredded Parmesan cheese, divided
  • ¾ cup panko breadcrumbs
  • ¼ cup butter, melted

Instructions

  1. Preheat oven to 425°F. Cook zucchini according to package directions in microwave; drain well.
  2. Combine zucchini, chicken, tomatoes, soup, and 1 cup cheese in a large bowl. Pour mixture into a greased 11- x 7-inch baking dish. Sprinkle with ¼ cup cheese.
  3. Stir together breadcrumbs and butter. Sprinkle over casserole. Bake 15 minutes or until top is lightly browned.

  • ⅓ cup olive oil vinaigrette

Side Dish Instructions

  1.  Toss together greens and vinaigrette in a bowl.
