Rigatoni with Vodka Sauce

Ingredients

  • 1 (16-oz) box Barilla® Rigatoni
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • ½ tsp crushed red pepper
  • 3 Tbsp olive oil
  • 1 (6-oz) can tomato paste
  • ½ cup vodka
  • ¾ cup heavy cream, warmed
  • 1 cup freshly grated Parmesan cheese
  • ½ cup fresh basil leaves

Instructions

  1. Cook pasta 2 minutes less than package directs; drain, reserving 1 cup pasta water.
  2. Meanwhile, cook onion, garlic, and crushed red pepper in hot oil in a large Dutch oven over medium heat until onion is tender. Add tomato paste; cook, stirring frequently, 5 minutes.
  3. Add vodka, and cook 1 minute. Gradually add warm cream, and cook, stirring, 2 minutes. Remove from heat.
  4. Add hot cooked pasta; toss. Gradually add pasta water, stirring, 2 minutes until a smooth sauce forms. Gradually stir in cheese until blended. Top servings with fresh basil.
