Rigatoni with Vodka Sauce
Ingredients
- 1 (16-oz) box Barilla® Rigatoni
- 1 onion, chopped
- 3 cloves garlic, minced
- ½ tsp crushed red pepper
- 3 Tbsp olive oil
- 1 (6-oz) can tomato paste
- ½ cup vodka
- ¾ cup heavy cream, warmed
- 1 cup freshly grated Parmesan cheese
- ½ cup fresh basil leaves
Instructions
- Cook pasta 2 minutes less than package directs; drain, reserving 1 cup pasta water.
- Meanwhile, cook onion, garlic, and crushed red pepper in hot oil in a large Dutch oven over medium heat until onion is tender. Add tomato paste; cook, stirring frequently, 5 minutes.
- Add vodka, and cook 1 minute. Gradually add warm cream, and cook, stirring, 2 minutes. Remove from heat.
- Add hot cooked pasta; toss. Gradually add pasta water, stirring, 2 minutes until a smooth sauce forms. Gradually stir in cheese until blended. Top servings with fresh basil.
