Ingredients

  • 2 cups shredded rotisserie chicken
  • ½ cup reduced fat mayonnaise
  • ¼ cup chopped sun dried tomatoes in oil
  • 3 Tbsp chopped fresh basil
  • ½ tsp Italian seasoning
  • ¼ tsp pepper
  • 1 (5-oz) pkg spring mix
  • ½ English cucumber, sliced
  • ¼ cup refrigerated balsamic vinaigrette

Instructions

  1. Stir together chicken, mayonnaise, tomatoes, basil, Italian seasoning, and pepper in a bowl until blended.
  2. Divide greens, chicken salad, and cucumber among 4 plates. Drizzle with vinaigrette.

  • 2 whole wheat pita bread rounds
  • 2 Tbsp butter
  • ½ tsp garlic powder
  • ½ tsp dried parsley

Side Dish Instructions

  1. Preheat oven to 400°F. Brush pitas with butter, and sprinkle with garlic powder and parsley. Bake 3 to 5 minutes or until toasted. Cut into wedges.
