Ingredients
- 2 cups shredded rotisserie chicken
- ½ cup reduced fat mayonnaise
- ¼ cup chopped sun dried tomatoes in oil
- 3 Tbsp chopped fresh basil
- ½ tsp Italian seasoning
- ¼ tsp pepper
- 1 (5-oz) pkg spring mix
- ½ English cucumber, sliced
- ¼ cup refrigerated balsamic vinaigrette
Instructions
- Stir together chicken, mayonnaise, tomatoes, basil, Italian seasoning, and pepper in a bowl until blended.
- Divide greens, chicken salad, and cucumber among 4 plates. Drizzle with vinaigrette.

- 2 whole wheat pita bread rounds
- 2 Tbsp butter
- ½ tsp garlic powder
- ½ tsp dried parsley
Side Dish Instructions
- Preheat oven to 400°F. Brush pitas with butter, and sprinkle with garlic powder and parsley. Bake 3 to 5 minutes or until toasted. Cut into wedges.
