Pork, Tomato, and White Bean Stew

Ingredients

  • 1½ lb ground pork
  • 1 onion, chopped
  • 3 stalks celery, chopped
  • 2 carrots, chopped
  • 3 cloves garlic, minced
  • 2 (15-oz) cans cannellini beans, rinsed and drained
  • 1 (28-oz) can petite diced tomatoes
  • 1 (15-oz) can tomato sauce
  • 1¾ cups less sodium chicken broth
  • 2 Tbsp chili powder
  • 1 tsp Italian seasoning

Instructions

  1. Cook pork, onion, celery, carrots, and garlic in a large skillet over medium heat until pork is browned and crumbly; drain.
  2. Transfer to a 5- to 7-quart slow cooker. Stir in beans and remaining ingredients; cover and cook on LOW 8 to 10 hours.

  • 1 (8.5-oz) pkg cornbread mix
  • 1 large egg
  • ⅓ cup milk

Side Dish Instructions

  1. Prepare cornbread according to package directions using egg and milk.
