Roasted Broccoli and Bacon Bowls

Ingredients
- 2 (12-oz) pkg broccoli florets
- 2 shallots, sliced
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 2 cloves garlic, minced
- 1 (12-oz) pkg bacon, chopped
- 3 (3.5-oz) pouches boil in bag brown rice
- 2 lemons
- 1 (5-oz) pkg crumbled goat cheese
Instructions
- Preheat oven to 425°F. Toss together broccoli, shallots, oil, salt, pepper, and garlic. Spread broccoli mixture in a single layer on 2 large rimmed baking sheets. Sprinkle with bacon. Bake 20 to 25 minutes or until broccoli is tender and lightly browned.
- Meanwhile, cook rice according to package directions.
- Grate zest and squeeze juice from lemons. Toss together broccoli mixture, lemon zest, lemon juice, and cheese. Serve over rice.
