Ingredients

  • 2¼ lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 1½ cups marinara sauce
  • 1½ cups shredded mozzarella cheese
  • ½ (6-oz) pkg pepperoni
  • 1 (2.25-oz) can sliced black olives, drained
  • 3 green onions, sliced

Instructions

  1. Preheat broiler. Cook chicken, in batches if necessary, in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until browned.
  2. Transfer chicken to an 13- x 9-inch broiler-safe dish. Top chicken with marinara sauce, cheese, pepperoni, and olives.
  3. Broil 2 to 3 minutes or until cheese melts. Sprinkle with onions.

  • 1 (10-oz) pkg chopped romaine lettuce
  • 3 tomatoes, chopped
  • ¾ cup chopped red onion
  • ½ cup sliced pepperoncini
  • ½ cup olive oil vinaigrette

  1. Toss together all ingredients in a large bowl.
