Chopped Chicken-Kale Bowls

Ingredients
- 1½ cups quick cooking barley
- 2 (5-oz) pkg baby kale
- 1 (8.8-oz) pkg cooked red beets, drained and quartered
- 2 Tbsp olive oil
- ½ cup lemon vinaigrette
- ⅓ cup mayonnaise
- 3 cups chopped rotisserie chicken
- 2 avocados, chopped
Instructions
- Cook barley according to package directions.
- Meanwhile, cook kale and beets in hot oil in a large skillet over medium-high heat 5 minutes or until kale wilts.
- Stir together vinaigrette and mayonnaise, adding water if needed to reach desired consistency.
- Divide barley among 6 bowls. Top with kale mixture, chicken, and avocado; drizzle with mayonnaise mixture.
