Creamy Ginger Salmon

Ingredients
- ¾ lb salmon fillets
- ⅛ tsp salt
- ⅛ tsp pepper
- 3 Tbsp creamy peanut butter
- 2 tsp grated fresh ginger
- 2 tsp rice vinegar
- 1 tsp less sodium soy sauce
- 3 Tbsp water
Instructions
- Preheat oven to 400°F. Place fish on a baking sheet; sprinkle with salt and pepper. Bake 10 to 12 minutes or until fish flakes with a fork.
- Meanwhile, combine peanut butter, ginger, vinegar, and soy sauce in a small saucepan; cook over medium heat 2 to 3 minutes, stirring, until combined. Slowly add water, 1 Tbsp at a time, until sauce is smooth. Serve sauce with fish.

- 1 (8-oz) pkg snow peas
- 1 Tbsp less sodium soy sauce
- 1 tsp sesame seeds

- Cook rice according to package directions.
- Cook snow peas according to package directions. Stir in soy sauce and sesame seeds.
