Chipotle Black Bean Nachos

Ingredients
- 1 (12-oz) pkg frozen corn kernels
- 1 onion, chopped
- 2 Tbsp olive oil
- 1 (15-oz) can black beans, rinsed and drained
- 2 tsp ground cumin
- 2 tsp chipotle chili powder, divided
- 1½ tsp garlic powder, divided
- ¼ tsp crushed red pepper
- 1 (8-oz) carton sour cream
- ½ cup jarred diced jalapeños
- 2 Tbsp lime juice
- 1 (13-oz) pkg restaurant style tortilla chips
- 1 (8-oz) block Monterey Jack cheese, shredded
- 3 Roma tomatoes, chopped
- 3 green onions, thinly sliced
Instructions
- Preheat broiler. Cook corn and onion in hot oil in a large skillet over medium-high heat 7 to 8 minutes or until lightly browned and tender. Stir in beans, cumin, 1 tsp chili powder, 1 tsp garlic powder, and red pepper; cook 3 minutes or until thoroughly heated.
- Meanwhile, stir together sour cream, jalapeños, lime juice, 1 tsp chili powder, and ½ tsp garlic powder.
- Spread chips on a large baking sheet; sprinkle with cheese. Broil 2 to 3 minutes or until cheese melts. Top with corn mixture, tomatoes, sour cream mixture, and green onions.
