Chipotle Black Bean Nachos

Ingredients

  • 1 (12-oz) pkg frozen corn kernels
  • 1 onion, chopped
  • 2 Tbsp olive oil
  • 1 (15-oz) can black beans, rinsed and drained
  • 2 tsp ground cumin
  • 2 tsp chipotle chili powder, divided
  • 1½ tsp garlic powder, divided
  • ¼ tsp crushed red pepper
  • 1 (8-oz) carton sour cream
  • ½ cup jarred diced jalapeños
  • 2 Tbsp lime juice
  • 1 (13-oz) pkg restaurant style tortilla chips
  • 1 (8-oz) block Monterey Jack cheese, shredded
  • 3 Roma tomatoes, chopped
  • 3 green onions, thinly sliced

Instructions

  1. Preheat broiler. Cook corn and onion in hot oil in a large skillet over medium-high heat 7 to 8 minutes or until lightly browned and tender. Stir in beans, cumin, 1 tsp chili powder, 1 tsp garlic powder, and red pepper; cook 3 minutes or until thoroughly heated.
  2. Meanwhile, stir together sour cream, jalapeños, lime juice, 1 tsp chili powder, and ½ tsp garlic powder.
  3. Spread chips on a large baking sheet; sprinkle with cheese. Broil 2 to 3 minutes or until cheese melts. Top with corn mixture, tomatoes, sour cream mixture, and green onions.
