Cajun Chicken Sandwich

Ingredients
- ¾ lb boneless, skinless chicken breasts
- 1 tsp salt free Cajun seasoning
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp salt
- 1 Tbsp olive oil
- 3 Tbsp barbecue sauce
- 3 brioche buns, split and toasted
- ½ avocado, sliced
- ½ red onion, sliced
Instructions
- Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle with Cajun seasoning, garlic powder, onion powder, and salt.
- Cook chicken in hot oil in a nonstick skillet over medium high heat 5 minutes per side or until done. Remove from skillet, and set aside.
- Spread barbecue sauce on buns. Top with chicken, avocado, and red onion.

- 1 (10-oz) pkg chopped romaine lettuce
- ½ cup sliced English cucumber
- ½ cup halved grape tomatoes
- 3 Tbsp olive oil vinaigrette

- Toss together all ingredients in a bowl.
