Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 1 tsp salt free Cajun seasoning
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp salt
  • 1 Tbsp olive oil 
  • 3 Tbsp barbecue sauce
  • 3 brioche buns, split and toasted
  • ½ avocado, sliced
  • ½ red onion, sliced

Instructions

  1. Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle with Cajun seasoning, garlic powder, onion powder, and salt.
  2. Cook chicken in hot oil in a nonstick skillet over medium high heat 5 minutes per side or until done. Remove from skillet, and set aside.
  3. Spread barbecue sauce on buns. Top with chicken, avocado, and red onion.

Side Dish Ingredients

  • 1 (10-oz) pkg chopped romaine lettuce
  • ½ cup sliced English cucumber
  • ½ cup halved grape tomatoes
  • 3 Tbsp olive oil vinaigrette

  1. Toss together all ingredients in a bowl.
