Oven-Baked Shrimp Scampi
Spaghetti and Herbed Asparagus

Ingredients
- ½ lemon
- ¾ lb peeled and deveined, large raw shrimp
- 1 clove garlic, minced
- 1½ Tbsp butter, melted and divided
- 2 Tbsp less sodium chicken broth
- ⅛ tsp salt
- ⅛ tsp pepper
- 3 Tbsp panko breadcrumbs
- 2 Tbsp freshly grated Parmesan cheese
- 2 Tbsp chopped fresh parsley, divided
Instructions
- Preheat oven to 425°F. Grate zest and squeeze juice from lemon half.
- Combine lemon juice, shrimp, garlic, 1 Tbsp melted butter, broth, salt, and pepper in a bowl, tossing to coat shrimp.
- Combine breadcrumbs, cheese, 1 Tbsp parsley, ½ Tbsp melted butter, and lemon zest in a second bowl. Dredge shrimp in breadcrumbs mixture, pressing gently to adhere. Place on a greased wire rack on a rimmed baking sheet.
- Bake 8 to 10 minutes or until shrimp turn pink. Remove from oven.
- Increase oven temperature to broil. Broil shrimp 2 minutes or until lightly browned. Sprinkle with 1 Tbsp parsley.

- ½ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Cook pasta according to package directions.
- Meanwhile, toss together asparagus, oil, seasoning, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 10 to 15 minutes or until crisp-tender.
