Ingredients

  • 2 (12-oz) pkg frozen peas and carrots
  • 1 onion, chopped
  • ¼ cup chopped fresh thyme, divided
  • ¾ tsp salt
  • ¾ tsp pepper
  • 3 Tbsp olive oil, divided
  • 1 cup less sodium chicken broth
  • 2 Tbsp all purpose flour
  • 3 cups shredded rotisserie chicken
  • 2 cups panko breadcrumbs

Instructions

  1. Preheat broiler. Cook peas and carrots, onion, 1 Tbsp thyme, salt, and pepper in 2 Tbsp hot oil in a large cast-iron or ovenproof skillet over medium-high heat 8 minutes or until browned.
  2. Whisk together broth and flour; add broth mixture and chicken to skillet. Cook 6 to 8 minutes or until thickened.
  3. Meanwhile, toss together breadcrumbs, 3 Tbsp thyme, and 1 Tbsp oil. Sprinkle over chicken mixture. Broil 2 minutes or until breadcrumbs are lightly browned.

  • 1½ lb green beans, trimmed
  • 3 Tbsp olive oil
  • ¾ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer. Roast 12 to 15 minutes or until beans are browned and tender.
