Grilled Lettuce-Wrapped Cuban Burgers

Ingredients

  • 1 lb ground beef
  • ½ lb ground pork
  • ½ cup whole grain mustard, divided
  • ½ tsp pepper
  • 6 slices Swiss cheese
  • 6 Tbsp mayonnaise
  • 6 large romaine lettuce leaves
  • 18 dill pickle slices

Instructions

  1. Heat a grill pan to medium-high heat; coat with with cooking spray.
  2. Gently mix together beef, pork, 2 Tbsp mustard, and pepper using your hands; shape into 6 patties. Grill patties 4 minutes per side or until no longer pink in centers.
  3. Top each burger with 1 slice cheese; grill 1 minute or until melted.
  4. Stir together mayonnaise and 6 Tbsp mustard; spread on one side of each lettuce leaf. Top lettuce with burger patties and pickle slices.

  • 6 Tbsp olive oil
  • 2 Tbsp red wine vinegar
  • 1 tsp salt
  • 2 cucumbers, halved lengthwise and sliced
  • 1 pint grape tomatoes, halved
  • 6 Tbsp sliced fresh basil

Side Dish Instructions

  1. Whisk together oil, vinegar, and salt in a large bowl. Add cucumbers, tomatoes, and basil; toss. Chill 15 to 30 minutes.
