Grilled Lettuce-Wrapped Cuban Burgers
Marinated Cucumber and Tomatoes

Ingredients
- 1 lb ground beef
- ½ lb ground pork
- ½ cup whole grain mustard, divided
- ½ tsp pepper
- 6 slices Swiss cheese
- 6 Tbsp mayonnaise
- 6 large romaine lettuce leaves
- 18 dill pickle slices
Instructions
- Heat a grill pan to medium-high heat; coat with with cooking spray.
- Gently mix together beef, pork, 2 Tbsp mustard, and pepper using your hands; shape into 6 patties. Grill patties 4 minutes per side or until no longer pink in centers.
- Top each burger with 1 slice cheese; grill 1 minute or until melted.
- Stir together mayonnaise and 6 Tbsp mustard; spread on one side of each lettuce leaf. Top lettuce with burger patties and pickle slices.

- 6 Tbsp olive oil
- 2 Tbsp red wine vinegar
- 1 tsp salt
- 2 cucumbers, halved lengthwise and sliced
- 1 pint grape tomatoes, halved
- 6 Tbsp sliced fresh basil
Side Dish Instructions
- Whisk together oil, vinegar, and salt in a large bowl. Add cucumbers, tomatoes, and basil; toss. Chill 15 to 30 minutes.
