Mushroom-Swiss Patties
Zucchini and Yellow SquashIngredients
- ½ Tbsp butter
- 1 (8-oz) pkg sliced baby portobello mushrooms
- 2 Tbsp less sodium soy sauce
- ½ (1-lb) pkg lean ground beef patties
- ½ tsp pepper
- ¼ tsp garlic powder
- 2 slices Swiss cheese
Instructions
- Melt butter in a nonstick skillet over medium-high heat. Add mushrooms; cook 10 minutes or until tender. Add soy sauce; cook 1 minute. Remove mushrooms from skillet.
- Sprinkle patties with pepper and garlic powder. Cook patties in skillet over medium-high heat 5 to 6 minutes per side or until no longer pink. Top each patty with cheese; let stand until cheese melts. Spoon mushrooms over patties.

- 1 zucchini, coarsely chopped
- ½ onion, coarsely chopped
- 1 Tbsp minced garlic
- ¼ tsp pepper
- ⅛ tsp salt
Side Dish Instructions
- Melt butter in a large skillet over medium-high heat. Add yellow squash, zucchini, onion, garlic, pepper, and salt; cook 5 to 10 minutes or until tender.
