Mushroom-Swiss Patties

Ingredients

  • ½ Tbsp butter
  • 1 (8-oz) pkg sliced baby portobello mushrooms
  • 2 Tbsp less sodium soy sauce
  • ½ (1-lb) pkg lean ground beef patties
  • ½ tsp pepper
  • ¼ tsp garlic powder
  • 2 slices Swiss cheese

Instructions

  1. Melt butter in a nonstick skillet over medium-high heat. Add mushrooms; cook 10 minutes or until tender. Add soy sauce; cook 1 minute. Remove mushrooms from skillet.
  2. Sprinkle patties with pepper and garlic powder. Cook patties in skillet over medium-high heat 5 to 6 minutes per side or until no longer pink. Top each patty with cheese; let stand until cheese melts. Spoon mushrooms over patties.

  • 2 yellow squash, coarsely chopped
  • 1 zucchini, coarsely chopped
  • ½ onion, coarsely chopped
  • 1 Tbsp minced garlic
  • ¼ tsp pepper
  • ⅛ tsp salt

Side Dish Instructions

  1. Melt butter in a large skillet over medium-high heat. Add yellow squash, zucchini, onion, garlic, pepper, and salt; cook 5 to 10 minutes or until tender.
