Cheddar Cheese Mashed Potatoes and Green Beans

Ingredients

  • 1 (1½-lb) boneless chuck roast, trimmed
  • ½ (16-oz) pkg baby carrots
  • ½ onion, cut into wedges
  • 2 stalks celery, cut into 1-inch pieces
  • 1 Tbsp Italian dressing and seasoning mix
  • 1 Tbsp brown gravy mix
  • 1 Tbsp ranch seasoning mix
  • ½ cup less sodium chicken broth

Instructions

  1. Place roast, carrots, onion, and celery in a 4- to 6-quart slow cooker. Sprinkle seasoning and gravy mixes over roast and vegetables. Pour broth over roast.
  2. Cover, and cook 8 to 10 hours or until roast is very tender. Slice or shred roast and serve with vegetables and gravy.

Side Dish Ingredients

  • 1 lb red potatoes, coarsely chopped
  • 3 Tbsp butter
  • ½ cup heavy cream
  • ½ cup shredded sharp Cheddar cheese
  • 1 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a Dutch oven over medium-high heat; reduce heat, and simmer 12 minutes or until tender.
  2. Drain potatoes, and return to pot; mash to desired consistency with a potato masher. Stir in butter, cream, and cheese, stirring until blended.
  3. Steam green beans according to package directions.
