3-Packet Roast
Cheddar Cheese Mashed Potatoes and Green Beans
Ingredients
- 1 (1½-lb) boneless chuck roast, trimmed
- ½ (16-oz) pkg baby carrots
- ½ onion, cut into wedges
- 2 stalks celery, cut into 1-inch pieces
- 1 Tbsp Italian dressing and seasoning mix
- 1 Tbsp brown gravy mix
- 1 Tbsp ranch seasoning mix
- ½ cup less sodium chicken broth
Instructions
- Place roast, carrots, onion, and celery in a 4- to 6-quart slow cooker. Sprinkle seasoning and gravy mixes over roast and vegetables. Pour broth over roast.
- Cover, and cook 8 to 10 hours or until roast is very tender. Slice or shred roast and serve with vegetables and gravy.
Side Dish Ingredients
- 1 lb red potatoes, coarsely chopped
- 3 Tbsp butter
- ½ cup heavy cream
- ½ cup shredded sharp Cheddar cheese
- 1 (8-oz) pkg thin green beans
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a Dutch oven over medium-high heat; reduce heat, and simmer 12 minutes or until tender.
- Drain potatoes, and return to pot; mash to desired consistency with a potato masher. Stir in butter, cream, and cheese, stirring until blended.
- Steam green beans according to package directions.
