Grilled Smoked Gouda Burgers
Charred Squash SaladIngredients
- 6 (5.3-oz) ground beef patties
- 3 Tbsp gluten free Worcestershire sauce, divided
- 1 Tbsp olive oil
- 1 large onion, cut into ¼ inch thick slices
- 1½ cups shredded smoked Gouda cheese
- 1 head curly leaf lettuce, separated into leaves
- 1 large tomato, sliced
Instructions
- Preheat grill to medium-high heat. Season patties with salt and pepper, if desired. Drizzle with 2 Tbsp Worcestershire sauce.
- Combine 1 Tbsp Worcestershire sauce and oil. Brush onion with Worcestershire mixture.
- Grill burgers, covered, 4 to 5 minutes per side or until no longer pink, topping with cheese during last 1 minute of cooking. Grill onions 2 minutes per side or until charred.
- Serve burgers on lettuce leaves with tomato and grilled onion.
Side Dish Ingredients
- 1 lb yellow squash, cut into planks
- 3 Tbsp olive oil, divided
- 1 Tbsp minced garlic
- 1 Tbsp lemon juice
- 2 (5-oz) pkg spring mix
- ½ cup shredded Parmesan cheese
Side Dish Instructions
- Preheat grill to medium-high heat. Toss together squash, 1 Tbsp oil, and garlic; place on a grill rack. Grill, covered, 2 to 3 minutes per side or until squash is well marked on both sides. Remove from grill; coarsely chop.
- Meanwhile, whisk together 2 Tbsp oil and lemon juice in a large bowl. Add salad greens and squash; toss. Sprinkle with cheese. Season with salt and pepper, if desired.
