Grilled Smoked Gouda Burgers

Ingredients

  • 6 (5.3-oz) ground beef patties
  • 3 Tbsp gluten free Worcestershire sauce, divided
  • 1 Tbsp olive oil
  • 1 large onion, cut into ¼ inch thick slices
  • 1½ cups shredded smoked Gouda cheese
  • 1 head curly leaf lettuce, separated into leaves
  • 1 large tomato, sliced

Instructions

  1. Preheat grill to medium-high heat. Season patties with salt and pepper, if desired. Drizzle with 2 Tbsp Worcestershire sauce.
  2. Combine 1 Tbsp Worcestershire sauce and oil. Brush onion with Worcestershire mixture.
  3. Grill burgers, covered, 4 to 5 minutes per side or until no longer pink, topping with cheese during last 1 minute of cooking. Grill onions 2 minutes per side or until charred.
  4. Serve burgers on lettuce leaves with tomato and grilled onion.

Side Dish Ingredients

  • 1 lb yellow squash, cut into planks
  • 3 Tbsp olive oil, divided
  • 1 Tbsp minced garlic
  • 1 Tbsp lemon juice
  • 2 (5-oz) pkg spring mix
  • ½ cup shredded Parmesan cheese

Side Dish Instructions

  1. Preheat grill to medium-high heat. Toss together squash, 1 Tbsp oil, and garlic; place on a grill rack. Grill, covered, 2 to 3 minutes per side or until squash is well marked on both sides. Remove from grill; coarsely chop.
  2. Meanwhile, whisk together 2 Tbsp oil and lemon juice in a large bowl. Add salad greens and squash; toss. Sprinkle with cheese. Season with salt and pepper, if desired.
