Skillet Lasagna

Ingredients
- 1 (12-oz) pkg frozen veggie crumbles
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 (10-oz) pkg frozen chopped spinach, thawed
- 2 tsp Italian seasoning
- 1 (9-oz) box oven ready lasagna noodles, broken
- 1 (14.5-oz) can fire roasted diced tomatoes
- 1¾ cups low sodium vegetable broth
- 1 (8-oz) can tomato sauce
- 1 (8-oz) pkg shredded mozzarella cheese
Instructions
- Cook crumbles, onion, and garlic in an ovenproof skillet over medium heat 10 minutes or until thoroughly heated.
- Squeeze spinach dry using paper towels. Add spinach and Italian seasoning to skillet; cook 2 minutes.
- Preheat broiler. Add noodles, tomatoes, broth, and tomato sauce to skillet; bring to a boil, cover, reduce heat, and simmer 5 to 8 minutes or until noodles are tender.
- Season with salt and pepper, if desired. Top with cheese; broil 2 to 3 minutes or until cheese is melted and golden.
