Ingredients

  • 1 (12-oz) pkg frozen veggie crumbles
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 (10-oz) pkg frozen chopped spinach, thawed
  • 2 tsp Italian seasoning
  • 1 (9-oz) box oven ready lasagna noodles, broken
  • 1 (14.5-oz) can fire roasted diced tomatoes
  • 1¾ cups low sodium vegetable broth
  • 1 (8-oz) can tomato sauce
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Cook crumbles, onion, and garlic in an ovenproof skillet over medium heat 10 minutes or until thoroughly heated.
  2. Squeeze spinach dry using paper towels. Add spinach and Italian seasoning to skillet; cook 2 minutes.
  3. Preheat broiler. Add noodles, tomatoes, broth, and tomato sauce to skillet; bring to a boil, cover, reduce heat, and simmer 5 to 8 minutes or until noodles are tender.
  4. Season with salt and pepper, if desired. Top with cheese; broil 2 to 3 minutes or until cheese is melted and golden.
