Sweet Kale and Apple Salad

Ingredients
- 1 (32-oz) pkg frozen potato tots
- 2 Tbsp butter
- 2 onions, thinly sliced
- 1½ (18-oz) jar chicken gravy
- 1 (8-oz) log fresh mozzarella cheese, torn into bite sized pieces
Instructions
- Bake or fry potato tots according to package directions.
- Meanwhile, melt butter in a large skillet over medium-high heat. Add onions, and cook, stirring occasionally, until golden brown and tender. Reduce heat to low, and stir in gravy.
- Preheat oven to 400°F. Meanwhile, arrange half of crispy potato tots in a large cast-iron skillet. Sprinkle with half of cheese. Repeat layers. Bake 5 minutes or until cheese begins to melt.
- Spoon gravy mixture over cheesy tots.

- 2 honeycrisp apples, chopped

- Prepare salad according to package directions in a large bowl; add apples. Toss.
