Cheesy Broccoli Potatoes

Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 1½ Tbsp olive oil
  • 6 large russet potatoes
  • 6 Tbsp butter, cut into 6 pieces
  • 1 (8-oz) pkg shredded Colby Jack cheese
  • 1 (8-oz) carton sour cream

Instructions

  1. Preheat oven to 450°F. Toss broccoli and oil together on a large rimmed baking sheet; spread in a single layer. Season with salt and pepper, if desired. Bake 12 to 15 minutes or until browned and tender.
  2. Meanwhile, pierce potatoes several times with a fork.
  3. Microwave potatoes at HIGH 12 to 15 minutes or until tender. Split potatoes and fluff with a fork; add butter. Season with salt and pepper. if desired.
  4. Divide roasted broccoli among potatoes; sprinkle with cheese. Dollop with sour cream.

  • 1 (16-oz) pkg tricolor coleslaw
  • 1 (8-oz) bag mini sweet peppers, sliced
  • ¾ cup refrigerated coleslaw dressing

Side Dish Instructions

  1. Toss together all ingredients in a large bowl. Cover and refrigerate until ready to serve.
