Ingredients

  • 1½ lb grouper fillets
  • 2 tsp salt free Greek seasoning
  • 3 Tbsp olive oil, divided
  • 1 pint grape tomatoes, halved
  • ¾ cup sliced green or kalamata olives
  • ⅓ cup drained capers
  • 12 corn tortillas 
  • 1½ cups crumbled feta cheese
  • ⅓ cup chopped fresh parsley

Instructions

  1. Sprinkle fish with seasoning. Cook fish in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or until fish flakes with a fork. Remove fish from skillet; flake fish into large pieces.
  2. Cook tomatoes in 1 Tbsp hot oil in same skillet over medium-high heat 5 minutes or until tender. Stir in olives and capers.
  3. Divide fish and vegetables among tortillas. Sprinkle with cheese and, if desired, parsley.

  • 1 (10-oz) pkg spinach
  • ⅓ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together spinach and vinaigrette in a large bowl.
