Mediterranean Fish Tacos

Ingredients
- 1½ lb grouper fillets
- 2 tsp salt free Greek seasoning
- 3 Tbsp olive oil, divided
- 1 pint grape tomatoes, halved
- ¾ cup sliced green or kalamata olives
- ⅓ cup drained capers
- 12 corn tortillas
- 1½ cups crumbled feta cheese
- ⅓ cup chopped fresh parsley
Instructions
- Sprinkle fish with seasoning. Cook fish in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or until fish flakes with a fork. Remove fish from skillet; flake fish into large pieces.
- Cook tomatoes in 1 Tbsp hot oil in same skillet over medium-high heat 5 minutes or until tender. Stir in olives and capers.
- Divide fish and vegetables among tortillas. Sprinkle with cheese and, if desired, parsley.
