Ingredients
- 2 Tbsp Cajun seasoning
- 2 Tbsp lime juice
- 1 Tbsp dried rosemary
- ¼ tsp salt
- ¼ tsp pepper
- 2 lb bone in, skin on chicken thighs
Instructions
- Combine seasoning, juice, rosemary, salt, and pepper in a large zip-top plastic freezer bag. Add chicken; seal bag, and turn to coat. Chill 30 minutes.
- Preheat oven to 400°F. Remove chicken from marinade; discard marinade. Place chicken on a large rimmed foil-lined baking sheet.
- Bake 35 minutes or until chicken is done and skin is brown and crispy.
Side Dish Ingredients
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- 2 tsp dried thyme
- ¼ tsp salt
- 2 cloves garlic, minced
- 2 (12-oz) pkg broccoli florets
- ¼ cup sliced almonds
- 2 oz salami, chopped
Side Dish Instructions
- Preheat oven to 400°F. Whisk together oil, juice, thyme, salt, and garlic. Toss together broccoli and oil mixture on a large rimmed baking sheet; spread in a single layer.
- Bake 20 minutes. Stir in nuts and salami; bake 5 minutes longer.
