Ingredients

  • 2 Tbsp Cajun seasoning
  • 2 Tbsp lime juice
  • 1 Tbsp dried rosemary
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 lb bone in, skin on chicken thighs

Instructions

  1. Combine seasoning, juice, rosemary, salt, and pepper in a large zip-top plastic freezer bag. Add chicken; seal bag, and turn to coat. Chill 30 minutes.
  2. Preheat oven to 400°F. Remove chicken from marinade; discard marinade. Place chicken on a large rimmed foil-lined baking sheet.
  3. Bake 35 minutes or until chicken is done and skin is brown and crispy.

Side Dish Ingredients

  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 2 tsp dried thyme
  • ¼ tsp salt
  • 2 cloves garlic, minced
  • 2 (12-oz) pkg broccoli florets
  • ¼ cup sliced almonds
  • 2 oz salami, chopped

Side Dish Instructions

  1. Preheat oven to 400°F. Whisk together oil, juice, thyme, salt, and garlic. Toss together broccoli and oil mixture on a large rimmed baking sheet; spread in a single layer.
  2. Bake 20 minutes. Stir in nuts and salami; bake 5 minutes longer.
