Fried Chicken Salad

Ingredients

  • ½ (15-oz) pkg frozen lightly breaded chicken breast strips
  • 3 Tbsp barbecue sauce
  • 3 Tbsp refrigerated yogurt Ranch dressing
  • 1 head Bibb lettuce, torn
  • 1 Roma tomato, coarsely chopped
  • ½ cucumber, sliced or chopped
  • ¼ cup shredded reduced fat Cheddar cheese
  • 2 Tbsp chopped pecans
  • ¼ cup seasoned croutons

Instructions

  1. Cook chicken strips according to package directions. Cut into bite-size pieces.
  2. Stir together barbecue sauce and Ranch dressing in a medium bowl. Add lettuce, tomato, cucumber, cheese, and nuts; toss.
  3. Add chicken and croutons; toss.
