Ingredients
- 1 lb ground pork
- ¼ cup sliced yellow onion
- 1 clove garlic, minced
- 1 Tbsp olive oil
- ¼ cup less sodium chicken broth
- ½ Tbsp tomato paste
- ½ tsp ground cumin
- ⅛ tsp salt
- ⅛ tsp pepper
- 4 corn tortillas
- 1 cup shredded lettuce
- 2 Tbsp chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Sauté pork, onion, and garlic in hot oil in a large skillet over medium heat 5 to 7 minutes or until pork is cooked through and onions are tender; stir in, broth, tomato paste, cumin, salt, and pepper. Cook 10 minutes or until thoroughly heated.
- Heat tortillas according to package directions.
- Serve pork in warm tortillas; top with lettuce and cilantro, and serve with lime.
Side Dish Ingredients
- 1 cup corn kernels
- 1 Tbsp olive oil
- ½ lime
- 1 Tbsp olive oil mayonnaise
- ¼ cup crumbled feta cheese
- ½ small organic jalapeño pepper, minced
- 2 Tbsp chopped fresh cilantro
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Sauté corn in hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned. Transfer to a bowl.
- Grate zest and squeeze juice from lime. Add to corn in bowl along with remaining ingredients.
