Ingredients

  • 1 lb ground pork
  • ¼ cup sliced yellow onion
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • ¼ cup less sodium chicken broth
  • ½ Tbsp tomato paste
  • ½ tsp ground cumin
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 4 corn tortillas
  • 1 cup shredded lettuce
  • 2 Tbsp chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Sauté pork, onion, and garlic in hot oil in a large skillet over medium heat 5 to 7 minutes or until pork is cooked through and onions are tender; stir in, broth, tomato paste, cumin, salt, and pepper. Cook 10 minutes or until thoroughly heated.
  2. Heat tortillas according to package directions.
  3. Serve pork in warm tortillas; top with lettuce and cilantro, and serve with lime.

  • 1 cup corn kernels
  • 1 Tbsp olive oil
  • ½ lime
  • 1 Tbsp olive oil mayonnaise
  • ¼ cup crumbled feta cheese
  • ½ small organic jalapeño pepper, minced
  • 2 Tbsp chopped fresh cilantro
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Sauté corn in hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned. Transfer to a bowl.
  2. Grate zest and squeeze juice from lime. Add to corn in bowl along with remaining ingredients.
