Barbecue Flank Steak and Corn Salad
Cheesy Cauliflower MashIngredients
- ½ lb flank steak
- 3 Tbsp barbecue sauce, divided
- 1 small ear corn, shucked
- 1 small avocado, diced
- 1 Roma tomato, diced
Instructions
- Preheat grill to medium-high heat. Brush steak with 1 Tbsp barbecue sauce. Grill steak 4 minutes per side or to desired doneness, brushing with 2 Tbsp sauce during last 2 minutes of grilling. Let stand 10 minutes before thinly slicing across the grain.
- Grill corn 10 to 12 minutes or until tender, turning occasionally.
- Cut corn kernels off cob; discard cob. Toss corn kernels with avocado and tomato. Serve with steak.

- 1 (10-oz) pkg frozen mashed cauliflower
- ¼ cup shredded sharp Cheddar cheese
- 1 green onion, chopped
- ½ Tbsp butter
Side Dish Instructions
- Microwave cauliflower according to package directions. Stir in cheese, onion, and butter.
