Barbecue Flank Steak and Corn Salad

Ingredients

  • ½ lb flank steak 
  • 3 Tbsp barbecue sauce, divided
  • 1 small ear corn, shucked 
  • 1 small avocado, diced
  • 1 Roma tomato, diced 

Instructions

  1. Preheat grill to medium-high heat. Brush steak with 1 Tbsp barbecue sauce. Grill steak 4 minutes per side or to desired doneness, brushing with 2 Tbsp sauce during last 2 minutes of grilling. Let stand 10 minutes before thinly slicing across the grain.
  2. Grill corn 10 to 12 minutes or until tender, turning occasionally.
  3. Cut corn kernels off cob; discard cob. Toss corn kernels with avocado and tomato. Serve with steak.

Side Dish Ingredients

  • 1 (10-oz) pkg frozen mashed cauliflower
  • ¼ cup shredded sharp Cheddar cheese
  • 1 green onion, chopped
  • ½ Tbsp butter

Side Dish Instructions

  1. Microwave cauliflower according to package directions. Stir in cheese, onion, and butter.
