Ingredients

  • 1 (3-lb) boneless chuck roast, trimmed
  • 1 (16-oz) pkg baby carrots
  • 1 onion, cut into wedges
  • 4 stalks celery, cut into 1-inch pieces
  • 1 (0.7-oz) envelope Italian dressing and seasoning mix
  • 1 (0.87-oz) envelope brown gravy mix
  • 1 (1-oz) envelope ranch seasoning mix
  • 1 cup less sodium chicken broth

Instructions

  1. Place roast, carrots, onion, and celery in a 5- to 7-quart slow cooker. Sprinkle seasoning and gravy mixes over roast and vegetables. Pour broth over roast.
  2. Cover, and cook 8 to 10 hours or until roast is very tender. Slice or shred roast and serve with vegetables and gravy.

  • 2 lb red potatoes, coarsely chopped
  • 6 Tbsp butter
  • 1 cup heavy cream
  • 1 cup shredded sharp Cheddar cheese
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a large Dutch oven over medium-high heat; reduce heat, and simmer 12 minutes or until tender.
  2. Drain potatoes, and return to pot; mash to desired consistency with a potato masher. Stir in butter, cream, cheese, salt, and pepper, stirring until blended.
  3. Steam green beans according to package directions.
