Lemon Chicken-Broccoli Casserole

Ingredients

  • 1 (14-oz) pkg frozen broccoli florets
  • 2 cups chopped rotisserie chicken
  • 1 lemon
  • ½ (10.5-oz) can cream of chicken soup
  • ½ (8-oz) carton sour cream
  • 1½ Tbsp water
  • ¾ tsp curry powder
  • ¾ cup shredded sharp Cheddar cheese
  • ¼ cup almond flour
  • ¼ tsp garlic salt
  • ½ Tbsp olive oil

Instructions

  1. Preheat oven to 350°F. Steam broccoli according to package directions.
  2. Spread broccoli in a greased 11- x 7-inch pan. Top with chicken.
  3. Grate zest of lemons to measure 1 tsp, and squeeze juice to measure 1½ Tbsp.
  4. Whisk together soup, sour cream, lemon juice, water, and curry powder; spread over chicken. Sprinkle with cheese.
  5. Stir together almond flour, garlic salt, oil and lemon zest; sprinkle over casserole.
  6. Bake, uncovered, 30 minutes or until lightly browned.
