Ingredients

  • ½ lb boneless, skinless chicken breasts, cubed
  • 2 tsp paprika, divided
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp olive oil
  • ½ yellow onion, thinly sliced
  • 1 clove garlic, minced
  • ½ cup diced organic tomatoes
  • 1½ Tbsp less sodium chicken broth
  • ⅓ cup sour cream

Instructions

  1. Sprinkle chicken with 1 tsp paprika, salt, and pepper.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat, stirring often, until chicken is browned. Remove from skillet, and keep warm.
  3. Add onion and garlic; cook 3 to 5 minutes until onion is tender.
  4. Stir in tomatoes, 1 tsp paprika, and broth; bring to a boil. Add chicken; reduce heat, and simmer 5 minutes or until chicken is done. Stir in sour cream.
  5. Serve over noodles.

  • ½ (12-oz) pkg whole wheat egg noodles
  • 1 Tbsp olive oil
  • 2 Tbsp chopped fresh parsley
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • ½ lb green beans, trimmed

Side Dish Instructions

  1. Cook noodles according to package directions; stir in oil, parsley, and ⅛ tsp each salt and pepper.
  2. Meanwhile, steam green beans in a steamer basket over simmering water 6 minutes or until tender.
  3. Sprinkle beans with ⅛ tsp each salt and pepper.
