Parsley Egg Noodles and Steamed Green Beans

Ingredients
- ½ lb boneless, skinless chicken breasts, cubed
- 2 tsp paprika, divided
- ¼ tsp salt
- ⅛ tsp pepper
- 1 Tbsp olive oil
- ½ yellow onion, thinly sliced
- 1 clove garlic, minced
- ½ cup diced organic tomatoes
- 1½ Tbsp less sodium chicken broth
- ⅓ cup sour cream
Instructions
- Sprinkle chicken with 1 tsp paprika, salt, and pepper.
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat, stirring often, until chicken is browned. Remove from skillet, and keep warm.
- Add onion and garlic; cook 3 to 5 minutes until onion is tender.
- Stir in tomatoes, 1 tsp paprika, and broth; bring to a boil. Add chicken; reduce heat, and simmer 5 minutes or until chicken is done. Stir in sour cream.
- Serve over noodles.

- ½ (12-oz) pkg whole wheat egg noodles
- 1 Tbsp olive oil
- 2 Tbsp chopped fresh parsley
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- ½ lb green beans, trimmed
Side Dish Instructions
- Cook noodles according to package directions; stir in oil, parsley, and ⅛ tsp each salt and pepper.
- Meanwhile, steam green beans in a steamer basket over simmering water 6 minutes or until tender.
- Sprinkle beans with ⅛ tsp each salt and pepper.
