Ingredients

  • 1 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
  • 1 (8-oz) block mozzarella cheese, shredded
  • 6 oz cream cheese, softened
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 Tbsp minced garlic
  • 1 tsp Italian seasoning
  • ¾ tsp onion powder
  • 1½ lb boneless, skinless chicken thighs
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 400°F. Combine spinach, ½ cup mozzarella, and next 6 ingredients in a bowl.
  2. Place chicken in a greased large baking dish. Sprinkle with salt and pepper. Spread the spinach mixture on chicken; top with 1½ cups mozzarella.
  3. Cover loosely with foil; bake 20 minutes. Remove foil, bake 15 minutes longer or until chicken is done.

  • 3 Tbsp olive oil
  • 1½ tsp Italian seasoning
  • 1 (12-oz) pkg frozen green beans
  • ½ tsp salt
  • ½ tsp pepper

  1. Cook orzo according to package directions. Toss with oil and Italian seasoning.
  2. Cook green beans according to package directions. Toss with salt and pepper.
