Ginger-Hoisin Chicken

Ingredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- ⅓ cup sweet and sour sauce
- ¼ cup water
- 3 Tbsp hoisin sauce
- 2 Tbsp minced garlic
- 1 Tbsp ginger paste
Instructions
- Pound chicken to an even thickness between plastic wrap using a meat mallet.
- Cook chicken in hot oil, in batches if necessary, in a large skillet over medium-high heat 6 minutes per side or until done.
- Meanwhile, stir together sweet and sour sauce, water, hoisin, garlic, and ginger paste in a saucepan. Bring to a boil over medium heat, stirring often. Reduce heat, and simmer 3 minutes, stirring often. Serve chicken with sauce.
Side Dish Ingredients
- 3 (3.5-oz) pouches boil in bag brown rice
- 2 (8-oz) pkg snow peas
- 3 Tbsp less sodium soy sauce
- 1 Tbsp sesame seeds
Side Dish Instructions
- Cook rice according to package directions.
- Cook snow peas according to package directions. Stir in soy sauce and sesame seeds.
