Ingredients

  • ¾ lb ground beef
  • 1 (14.5-oz) can fire roasted crushed tomatoes
  • ¾ cup marinara sauce
  • 1½ tsp Italian seasoning
  • 1 (9-oz) pkg refrigerated cheese tortellini
  • 2 Tbsp chopped fresh basil

Instructions

  1. Cook plant-based beef in a large skillet over medium heat 8 minutes or until browned and crumbly; drain well, and transfer to a 3- to 4-quart slow cooker.
  2. Stir in tomatoes, marinara sauce, and Italian seasoning. Cover and cook on LOW 6 to 7 hours.
  3. Stir in tortellini. Cover and cook 20 minutes or until pasta is tender. Sprinkle with basil.

  • ½ (12-oz) pkg cauliflower florets
  • ½ (12-oz) pkg broccoli florets
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 375°F.
  2. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer. Bake 18 to 20 minutes or until tender.
