Ingredients

  • ½ (14-oz) pkg smoked sausage link, sliced
  • ½ (16-oz) pkg dried red beans, rinsed 
  • ½ onion, chopped
  • ½ green bell pepper, chopped
  • 1 stalk celery, chopped
  • 1 tsp Cajun seasoning
  • 3 cups less sodium chicken broth
  • ¾ cup long grain white rice

Instructions

  1. Cook sausage in a large nonstick skillet 8 to 10 minutes or until browned on both sides; drain.
  2. Stir together sausage, red beans, onion, bell pepper, celery, Cajun seasoning, and broth in a 3- to 4-quart slow cooker.
  3. Cover and cook on LOW 10 hours, stirring during last hour.
  4. Meanwhile, cook rice according to package directions. Divide rice among 3 shallow bowls. Top with bean mixture.

  • 1 (7-oz) pkg cornbread mix

Side Dish Instructions

  1. Bake cornbread according to package directions. Serve half, and reserve remaining half for another meal.
