Chicken-Sausage Gumbo
Ingredients
- 1½ lb boneless, skinless chicken breasts
- ½ (1-lb) pkg Cajun smoked sausage, cut into 2 inch pieces
- 1 (16-oz) pkg frozen sliced okra
- 1 (10-oz) pkg frozen seasoning blend (diced onion, bell peppers, and celery)
- 2 (14.5-oz) cans no salt added diced tomatoes
- 1 (14.5-oz) can less sodium chicken broth
- 1 Tbsp Cajun seasoning
Instructions
- Cut chicken into 2-inch pieces; place in a 5- to 7-quart slow cooker.
- Add sausage, okra, seasoning blend, tomatoes, broth, and seasoning. Cover and cook on LOW 6 to 8 hours or until chicken is very tender.
