Parmesan-Crusted Chicken
Lemon Zucchini with TomatoesIngredients
- 3 (4-oz) boneless, skinless chicken breasts
- ½ cup mayonnaise
- ¼ cup freshly grated Parmesan cheese
- ½ tsp garlic powder
- 1 tsp Italian seasoning
Instructions
- Preheat oven to 375°F. Season chicken with salt and pepper, if desired. Mix together mayonnaise, cheese, garlic powder, and Italian seasoning. Spread mixture over chicken in a lightly greased 2-quart baking dish.
- Bake 30 to 35 minutes or until chicken is browned and done.

- ½ cup cherry tomatoes
- 1 clove garlic, minced
- 1 tsp lemon zest
- 1 Tbsp olive oil
- ⅛ tsp salt
Side Dish Instructions
- Cut zucchini lengthwise into 4 pieces; cut each piece into ½-inch-thick slices.
- Cook zucchini, tomatoes, garlic, and lemon zest in hot oil in a large skillet over medium heat 2 minutes. Sprinkle with salt.
