Ingredients

  • 3 (4-oz) boneless, skinless chicken breasts
  • ½ cup mayonnaise
  • ¼ cup freshly grated Parmesan cheese
  • ½ tsp garlic powder
  • 1 tsp Italian seasoning

Instructions

  1. Preheat oven to 375°F. Season chicken with salt and pepper, if desired. Mix together mayonnaise, cheese, garlic powder, and Italian seasoning. Spread mixture over chicken in a lightly greased 2-quart baking dish.
  2. Bake 30 to 35 minutes or until chicken is browned and done.

  • 2 zucchini
  • ½ cup cherry tomatoes
  • 1 clove garlic, minced
  • 1 tsp lemon zest
  • 1 Tbsp olive oil
  • ⅛ tsp salt

Side Dish Instructions

  1. Cut zucchini lengthwise into 4 pieces; cut each piece into ½-inch-thick slices.
  2. Cook zucchini, tomatoes, garlic, and lemon zest in hot oil in a large skillet over medium heat 2 minutes. Sprinkle with salt.
