Berry-Lemon Curd Waffles

Ingredients

  • 1⅓ cups high protein buttermilk pancake mix
  • 1 cup low fat milk
  • 1 Tbsp canola oil
  • 1 tsp vanilla extract
  • 1 (4.4-oz) pkg blueberries, divided
  • 1 (6-oz) pkg raspberries, divided
  • ¼ cup lemon curd
  • 2 tsp powdered sugar
  • 2 Tbsp fresh mint leaves

Instructions

  1. Preheat waffle iron according to manufacturer's directions. Whisk together pancake mix, milk, oil, and vanilla in a large bowl until blended. Fold in ½ pkg each blueberries and raspberries.
  2. Spoon one-fourth of batter onto waffle iron; close, and cook 3 to 5 minutes or until browned and crisp. Top waffles with lemon curd and remaining berries. Sprinkle with powdered sugar and mint.
