Berry-Lemon Curd Waffles
Ingredients
- 1⅓ cups high protein buttermilk pancake mix
- 1 cup low fat milk
- 1 Tbsp canola oil
- 1 tsp vanilla extract
- 1 (4.4-oz) pkg blueberries, divided
- 1 (6-oz) pkg raspberries, divided
- ¼ cup lemon curd
- 2 tsp powdered sugar
- 2 Tbsp fresh mint leaves
Instructions
- Preheat waffle iron according to manufacturer's directions. Whisk together pancake mix, milk, oil, and vanilla in a large bowl until blended. Fold in ½ pkg each blueberries and raspberries.
- Spoon one-fourth of batter onto waffle iron; close, and cook 3 to 5 minutes or until browned and crisp. Top waffles with lemon curd and remaining berries. Sprinkle with powdered sugar and mint.
