Egg Melts with Cheddar and Avocado

Ingredients
- 2 whole wheat English muffins, halved
- 6 large eggs, lightly beaten
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 avocado, sliced
- 4 ultra thin slices Cheddar cheese
- 2 Tbsp finely chopped fresh chives
Instructions
- Preheat broiler. Arrange muffin halves, cut sides up, on a baking sheet; broil 2 minutes or until lightly toasted.
- Add eggs to a nonstick skillet over medium heat; cook, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set. Stir in salt and pepper.
- Spoon eggs over muffin halves; top with avocado and cheese. Broil 1 minute or until cheese melts. Sprinkle with chives.
