Egg Melts with Cheddar and Avocado

Ingredients

  • 2 whole wheat English muffins, halved
  • 6 large eggs, lightly beaten
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 avocado, sliced
  • 4 ultra thin slices Cheddar cheese 
  • 2 Tbsp finely chopped fresh chives

Instructions

  1. Preheat broiler. Arrange muffin halves, cut sides up, on a baking sheet; broil 2 minutes or until lightly toasted.
  2. Add eggs to a nonstick skillet over medium heat; cook, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set. Stir in salt and pepper.
  3. Spoon eggs over muffin halves; top with avocado and cheese. Broil 1 minute or until cheese melts. Sprinkle with chives.
