Pesto Pita Pizzas

Ingredients

  • 4 flax, oat bran, and whole wheat pita bread rounds
  • ½ cup refrigerated reduced fat pesto
  • 2 Roma tomatoes, sliced
  • ¾ cup shredded part skim mozzarella cheese
  • 2 Tbsp freshly shredded Parmesan cheese

Instructions

  1. Preheat oven to 425°F. Place pita rounds on a baking sheet coated with cooking spray. Bake 5 minutes or until toasted.
  2. Spread pesto on pitas; top with tomatoes and cheeses. Return to oven, and bake 8 to 10 minutes or until cheese melts.
