Bacon-Wrapped Avocado Chicken

Ingredients
- 1 lb boneless, skinless chicken breasts
- 1½ tsp chili powder
- ¼ tsp salt
- ⅛ tsp cayenne pepper
- 6 slices bacon
- 1 small avocado, halved
- 1 small clove garlic
- 3 Tbsp water
- 2 Tbsp fresh cilantro leaves
- 1 Tbsp lime juice
Instructions
- Preheat oven to 425°F. Sprinkle chicken with chili powder, salt, and cayenne pepper. Wrap each piece of chicken with 2 slices of bacon.
- Brown chicken in a large nonstick skillet over medium-high heat 3 minutes per side. Transfer chicken to a foil-lined baking sheet.
- Bake 10 minutes or until chicken is done and bacon is crisp.
- Meanwhile, process avocado, garlic, water, cilantro, and lime juice in a mini food processor until smooth. Serve sauce with chicken.

- ¾ lb asparagus, trimmed
- 1½ Tbsp extra virgin olive oil
- 1 Tbsp lemon juice
- ½ tsp balsamic vinegar
- ½ tsp Dijon mustard
- 1 Roma tomato, chopped
- 2 green onions, chopped
Side Dish Instructions
- Steam asparagus in a steamer basket over simmering water 3 minutes or until tender.
- Whisk together oil, lemon juice, vinegar, and mustard in a bowl. Add asparagus, tomato, and onions; toss.
