Ingredients
- 1 red bell pepper, thinly sliced
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 2 Tbsp olive oil
- 2 (14.5-oz) cans diced tomatoes
- 2 tsp smoked paprika
- ¼ tsp cayenne pepper
- 6 (6-oz) salmon fillets
- ¾ cup crumbled feta cheese
- Fresh basil leaves, optional
Instructions
- Sauté bell pepper, onion, and garlic in hot oil in a large skillet over medium-high heat 5 to 7 minutes or until fragrant. Stir in tomatoes, paprika, and cayenne pepper.
- Season salmon with salt and pepper, if desired; place fillets in tomato mixture.
- Cook, covered, 3 minutes. Reduce heat to medium; cook, covered 10 to 15 minutes or until fish flakes with a fork. Sprinkle with cheese and, if desired, basil.

- ¼ cup finely chopped fresh basil

- ¼ tsp pepper
