Ingredients

  • 1 red bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2 (14.5-oz) cans diced tomatoes
  • 2 tsp smoked paprika
  • ¼ tsp cayenne pepper
  • 6 (6-oz) salmon fillets
  • ¾ cup crumbled feta cheese
  • Fresh basil leaves, optional

Instructions

  1. Sauté bell pepper, onion, and garlic in hot oil in a large skillet over medium-high heat 5 to 7 minutes or until fragrant. Stir in tomatoes, paprika, and cayenne pepper.
  2. Season salmon with salt and pepper, if desired; place fillets in tomato mixture.
  3. Cook, covered, 3 minutes. Reduce heat to medium; cook, covered 10 to 15 minutes or until fish flakes with a fork. Sprinkle with cheese and, if desired, basil.

  • 1½ cups whole wheat couscous
  • ¼ cup finely chopped fresh basil
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • ¼ tsp kosher salt
  • ¼ tsp pepper

  1. Cook couscous according to package directions; stir in remaining ingredients.
