Halloumi and Summer Tomato Polenta Stacks

Ingredients
- 2 (8-oz) blocks halloumi cheese
- 2 (18-oz) tubes polenta
- 6 Tbsp olive oil, divided
- ¼ cup pesto
- 1½ lb heirloom tomatoes, sliced
- 3 cups baby arugula
- ¼ cup fresh basil leaves
- 3 Tbsp balsamic glaze
Instructions
- Preheat grill to medium-high heat. Brush cheese with 1 Tbsp oil. Grill, covered, 2 minutes per side or until grill marks appear.
- Brush polenta with 2 Tbsp oil. Grill, covered, 2 minutes per side or until grill marks appear.
- Combine pesto and 3 Tbsp oil. Stack polenta, grilled cheese, tomato slices, arugula, and basil on 6 plates. Drizzle with pesto mixture and balsamic glaze.
