Halloumi and Summer Tomato Polenta Stacks

Ingredients

  • 2 (8-oz) blocks halloumi cheese
  • 2 (18-oz) tubes polenta
  • 6 Tbsp olive oil, divided
  • ¼ cup pesto
  • 1½ lb heirloom tomatoes, sliced
  • 3 cups baby arugula
  • ¼ cup fresh basil leaves
  • 3 Tbsp balsamic glaze

Instructions

  1. Preheat grill to medium-high heat. Brush cheese with 1 Tbsp oil. Grill, covered, 2 minutes per side or until grill marks appear.
  2. Brush polenta with 2 Tbsp oil. Grill, covered, 2 minutes per side or until grill marks appear.
  3. Combine pesto and 3 Tbsp oil. Stack polenta, grilled cheese, tomato slices, arugula, and basil on 6 plates. Drizzle with pesto mixture and balsamic glaze.
