Club Sandwich Quesadillas
Dill Pickle Coleslaw and Potato ChipsIngredients
- 1 (12-oz) pkg bacon
- 6 burrito size flour tortillas
- ½ lb deli sliced less sodium turkey
- ½ lb deli sliced less sodium ham
- 1 (8-oz) pkg shredded Cheddar Jack cheese
- 6 Tbsp butter
- 1 cup Ranch dressing
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
- Top one side of each tortilla with bacon, turkey, ham, and cheese. Fold tortillas in half.
- Melt 2 Tbsp butter in a large nonstick skillet over medium heat; add 2 quesadillas to skillet. Cook 4 minutes per side or until golden brown; repeat twice with remaining butter and quesadillas. Serve with Ranch dressing.
Side Dish Ingredients
- 1 cup chopped hamburger dill chips
- ½ cup mayonnaise
- 1 Tbsp lemon juice
- 1 tsp honey
- 1 (16-oz) pkg tricolor coleslaw
- 1 (8-oz) bag kettle cooked potato chips
Side Dish Instructions
- Stir together all ingredients except chips in a large bowl just before serving. Season with salt and pepper, if desired.
- Serve chips on each plate.
