Dill Pickle Coleslaw and Potato Chips

Ingredients

  • 1 (12-oz) pkg bacon
  • 6 burrito size flour tortillas
  • ½ lb deli sliced less sodium turkey
  • ½ lb deli sliced less sodium ham
  • 1 (8-oz) pkg shredded Cheddar Jack cheese
  • 6 Tbsp butter
  • 1 cup Ranch dressing

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  2. Top one side of each tortilla with bacon, turkey, ham, and cheese. Fold tortillas in half.
  3. Melt 2 Tbsp butter in a large nonstick skillet over medium heat; add 2 quesadillas to skillet. Cook 4 minutes per side or until golden brown; repeat twice with remaining butter and quesadillas. Serve with Ranch dressing.

Side Dish Ingredients

  • 1 cup chopped hamburger dill chips
  • ½ cup mayonnaise
  • 1 Tbsp lemon juice
  • 1 tsp honey
  • 1 (16-oz) pkg tricolor coleslaw
  • 1 (8-oz) bag kettle cooked potato chips

Side Dish Instructions

  1. Stir together all ingredients except chips in a large bowl just before serving. Season with salt and pepper, if desired.
  2. Serve chips on each plate.
