Ingredients
- 1½ lb boneless, skinless chicken thighs
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 2 Tbsp olive oil
- 1 (5.3-oz) container plain Greek yogurt
- ½ cup chopped fresh cilantro
- 2 Tbsp lime juice
- 2 cloves garlic
- 1 jalapeno, cut in half
Instructions
- Sprinkle chicken with ½ tsp each salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
- Meanwhile, process yogurt, cilantro, lime juice, garlic, jalapeño, and ¼ tsp each salt and pepper. Serve sauce with chicken.

- 2 (20-oz) cans pineapple chunks in juice, well drained
- 6 Tbsp brown sugar
- 1½ cups long grain white rice
- ½ cup chopped fresh cilantro
- 3 Tbsp lime juice
Side Dish Instructions
- Preheat oven to 400°F. Spread pineapple in a single layer on a large rimmed baking sheet; sprinkle with sugar. Roast 25 to 30 minutes, stirring halfway through baking, until lightly browned.
- Meanwhile, cook rice according to package directions. Toss with cilantro and lime juice.
