Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 2 Tbsp olive oil
  • 1 (5.3-oz) container plain Greek yogurt
  • ½ cup chopped fresh cilantro
  • 2 Tbsp lime juice
  • 2 cloves garlic
  • 1 jalapeno, cut in half

Instructions

  1. Sprinkle chicken with ½ tsp each salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
  2. Meanwhile, process yogurt, cilantro, lime juice, garlic, jalapeño, and ¼ tsp each salt and pepper. Serve sauce with chicken.

  • 2 (20-oz) cans pineapple chunks in juice, well drained
  • 6 Tbsp brown sugar
  • 1½ cups long grain white rice
  • ½ cup chopped fresh cilantro
  • 3 Tbsp lime juice

Side Dish Instructions

  1. Preheat oven to 400°F. Spread pineapple in a single layer on a large rimmed baking sheet; sprinkle with sugar. Roast 25 to 30 minutes, stirring halfway through baking, until lightly browned.
  2. Meanwhile, cook rice according to package directions. Toss with cilantro and lime juice.
