Ingredients

  • 12 oz fettuccine
  • 1 (14-oz) pkg Cajun smoked sausage, sliced
  • 1 Tbsp olive oil
  • 1 (14-oz) jar Alfredo sauce
  • 1 (14.5-oz) can fire roasted diced tomatoes
  • 1 Tbsp Creole seasoning
  • 1 (10-oz) pkg spinach

Instructions

  1. Cook pasta according to package directions; drain and keep warm.
  2. Meanwhile, cook sausage in hot oil in a large skillet over medium-high heat until browned. Stir in Alfredo sauce, tomatoes, and seasoning; cook 5 minutes.
  3. Gradually stir in spinach until wilted; toss with hot cooked pasta.

Side Dish Ingredients

  • 1 (14-oz) French bread
  • 6 Tbsp butter
  • 3 Tbsp minced garlic
  • 2 tsp Italian seasoning

Side Dish Instructions

  1. Preheat oven to 400°F. Cut bread lengthwise and place, cut sides up, on a rimmed baking sheet. Spread butter over bread. Top with garlic and Italian seasoning.
  2. Bake 10 minutes or until browned and crisp.
