Cajun Sausage Alfredo

Ingredients
- 12 oz fettuccine
- 1 (14-oz) pkg Cajun smoked sausage, sliced
- 1 Tbsp olive oil
- 1 (14-oz) jar Alfredo sauce
- 1 (14.5-oz) can fire roasted diced tomatoes
- 1 Tbsp Creole seasoning
- 1 (10-oz) pkg spinach
Instructions
- Cook pasta according to package directions; drain and keep warm.
- Meanwhile, cook sausage in hot oil in a large skillet over medium-high heat until browned. Stir in Alfredo sauce, tomatoes, and seasoning; cook 5 minutes.
- Gradually stir in spinach until wilted; toss with hot cooked pasta.
Side Dish Ingredients
- 1 (14-oz) French bread
- 6 Tbsp butter
- 3 Tbsp minced garlic
- 2 tsp Italian seasoning
Side Dish Instructions
- Preheat oven to 400°F. Cut bread lengthwise and place, cut sides up, on a rimmed baking sheet. Spread butter over bread. Top with garlic and Italian seasoning.
- Bake 10 minutes or until browned and crisp.
