Ingredients

  • ½ (16-oz) pkg bacon
  • 6 burrito size, low carb, whole wheat tortillas
  • ½ lb deli sliced less sodium turkey
  • ½ lb deli sliced less sodium ham
  • 1 (8-oz) pkg shredded Cheddar Jack cheese
  • 3 Tbsp butter
  • ¾ cup Ranch dressing

Instructions

  1. Cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp; drain on paper towels.
  2. Top one side of each tortilla with bacon, turkey, ham, and cheese. Fold tortillas in half.
  3. Melt 1 Tbsp butter in a large nonstick skillet over medium heat; add 2 quesadillas to skillet. Cook 4 minutes per side or until golden brown; repeat twice with remaining butter and quesadillas. Serve with Ranch dressing.

  • 1 (16-oz) pkg tricolor coleslaw
  • 1 cup chopped dill pickle chips
  • ½ cup mayonnaise
  • 1 Tbsp lemon juice
  • 1 tsp honey
