Bacon-Swiss Quiche

Ingredients

  • ½ (15-oz) pkg refrigerated pie crusts
  • 8 slices bacon, chopped
  • 4 green onions, chopped
  • 1 (8-oz) block Swiss cheese, shredded and divided
  • 6 large eggs
  • 1 (8-oz) carton heavy cream
  • ⅛ tsp grated nutmeg

Instructions

  1. Preheat oven to 400°F. Unroll pie crust into a 9-inch pie plate. Fold edges under, and crimp as desired. Bake 7 minutes. Reduce oven temperature to 350°F.
  2. Meanwhile, cook bacon in a skillet over medium heat until crisp; drain on paper towels. Sprinkle bacon, onions, and 1 cup cheese in partially baked crust.
  3. Whisk together eggs, cream, and nutmeg in a bowl; season lightly with salt and pepper. Pour over bacon mixture in crust; sprinkle with 1 cup cheese.
  4. Bake 35 minutes or until center is set; let stand 10 minutes before serving. Serve half, and reserve half for another meal.

  • ½ (10-oz) pkg spinach
  • 1 cup sliced strawberries
  • ¼ cup thinly sliced red onion
  • ¼ cup balsamic vinaigrette

  1. Toss together all ingredients in a medium bowl.
