Cheeseburger Quesadillas

Ingredients

  • ¾ lb ground sirloin
  • 1 tsp salt free Montreal steak seasoning
  • 1 cup shredded reduced fat cheddar cheese
  • 16 dill pickle chips
  • ¼ cup minced red onion
  • 4 soft taco size whole wheat tortillas
  • 3 Tbsp Ranch secret sauce

Instructions

  1. Cook beef in a skillet over medium-high heat 6 to 8 minutes or until brown and crumbly. Drain, if needed, and stir in steak seasoning.
  2. Divide beef, cheese, pickles, and onion among tortillas. Fold tortillas in half; lightly coat outsides with cooking spray.
  3. Wipe skillet clean. Cook quesadillas, in batches in skillet over medium heat 2 to 3 minutes per side or until golden and cheese is melted. Serve quesadillas with secret sauce.

Side Dish Ingredients

  • 1 (9-oz) pkg romaine salad blend
  • ½ cup cherry tomatoes, halved
  • ⅓ cup refrigerated yogurt Ranch dressing

Side Dish Instructions

  1.  Toss together all ingredients in a large bowl.
