Ingredients

  • 1½ cups orzo
  • ½ cup olive oil vinaigrette
  • 1½ lb boneless, skinless chicken thighs, cubed
  • 1½ tsp Italian seasoning
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • 1 pint grape tomatoes
  • 3 Tbsp olive oil
  • 1 red onion, chopped
  • ½ (8-oz) pkg fresh mozzarella cheese pearls

Instructions

  1. Cook pasta according to package directions. Drain, and toss with vinaigrette.
  2. Sprinkle chicken with Italian seasoning, garlic powder, salt, and pepper. Cook chicken, tomatoes, and onion in 2 Tbsp hot oil in a large skillet over medium-high heat 6 to 8 minutes or until chicken is done and vegetables are tender.
  3. Stir in cheese. Serve chicken mixture over orzo.
