Ingredients

  • 1 cup sliced mushrooms
  • ½ cup chopped yellow onion
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 2 tsp organic tomato paste
  • ¼ cup breadcrumbs
  • 1 tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 large egg, lightly beaten
  • ½ lb ground round

Instructions

  1. Preheat oven to 450°F. Cook mushrooms, onion, and garlic in hot oil in a nonstick skillet over medium heat 10 minutes or until tender; transfer to a large bowl.
  2. Stir in tomato paste, breadcrumbs, seasoning, salt, pepper, and egg; add beef, and gently combine. Divid mixture among 4 cups in a greased standard muffin pan.
  3. Bake 20 minutes or until center is no longer pink. Drain, if needed, before serving.

Side Dish Ingredients

  • ¾ lb organic Yukon Gold potatoes, peeled and cut into 1 inch pieces
  • 3 Tbsp milk
  • ⅓ cup sour cream
  • 1 green onion, sliced
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 (12-oz) pkg trimmed green beans

Side Dish Instructions

  1. Bring potatoes and salted water to cover to a boil in a large saucepan. Cook 20 minutes or until tender; drain. Mash potatoes to desired consistency.
  2. Stir in milk, sour cream, onion, and ⅛ tsp each salt and pepper.
  3. Cook green beans according to package directions; toss with ⅛ tsp each salt and pepper.
