Sausage and Peppers Frittata
Quick Kale SaladIngredients
- 1 (16-oz) pkg ground sweet Italian sausage
- 1 (20-oz) pkg frozen bell peppers and onion blend
- 12 large eggs
- 1 (6-oz) pkg crumbled feta cheese
- 2 Tbsp chopped fresh oregano
Instructions
- Preheat broiler. Cook sausage and peppers mix in a large cast-iron skillet over medium-high heat until sausage is browned and crumbly; drain, and return to skillet.
- Reduce heat to medium. Whisk together eggs, cheese, and oregano. Add egg mixture to skillet. Cook, without stirring, until eggs begin to set. .
- Transfer to oven; broil 3 to 5 minutes or until top is golden and eggs are firm.
Side Dish Ingredients
- 1 (10-oz) pkg baby kale
- 1 (8-oz) pkg sliced mushrooms
- ½ cup sliced red onion
- ½ cup olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl just before serving.
