Sausage and Peppers Frittata

Ingredients

  • 1 (16-oz) pkg ground sweet Italian sausage
  • 1 (20-oz) pkg frozen bell peppers and onion blend
  • 12 large eggs
  • 1 (6-oz) pkg crumbled feta cheese
  • 2 Tbsp chopped fresh oregano

Instructions

  1. Preheat broiler. Cook sausage and peppers mix in a large cast-iron skillet over medium-high heat until sausage is browned and crumbly; drain, and return to skillet.
  2. Reduce heat to medium. Whisk together eggs, cheese, and oregano. Add egg mixture to skillet. Cook, without stirring, until eggs begin to set. .
  3. Transfer to oven; broil 3 to 5 minutes or until top is golden and eggs are firm.

Side Dish Ingredients

  • 1 (10-oz) pkg baby kale
  • 1 (8-oz) pkg sliced mushrooms
  • ½ cup sliced red onion
  • ½ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl just before serving.
