Sesame Rice with Spinach

Ingredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp vegetable oil
- 1 cup cashew pieces, divided
- 3 Tbsp less sodium soy sauce
- 2 Tbsp brown sugar
- 1½ Tbsp natural rice vinegar
- 2 cloves garlic
- ¼ cup water
- ⅓ cup chopped fresh cilantro
Instructions
- Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until browned.
- Meanwhile, process ¾ cup nuts in a food processor until ground. Add soy sauce, sugar, vinegar, and garlic; process until smooth, adding water, 1 Tbsp at a time, until sauce is smooth.
- Add sauce to skillet, reduce heat to medium, and cook 2 minutes or until thoroughly heated. Sprinkle with cilantro and ¼ cup nuts.

- 3 (3.5-oz) pouches boil in bag brown rice
- 1 (5-oz) pkg baby spinach
- 3 Tbsp less sodium soy sauce
- 2 Tbsp sesame oil
- 1 Tbsp sesame seeds
Side Dish Instructions
- Cook rice according to package directions. Stir in spinach, soy sauce, oil, and seeds, stirring until spinach wilts.
