Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp vegetable oil
  • 1 cup cashew pieces, divided
  • 3 Tbsp less sodium soy sauce
  • 2 Tbsp brown sugar
  • 1½ Tbsp natural rice vinegar
  • 2 cloves garlic
  • ¼ cup water
  • ⅓ cup chopped fresh cilantro

Instructions

  1. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until browned.
  2. Meanwhile, process ¾ cup nuts in a food processor until ground. Add soy sauce, sugar, vinegar, and garlic; process until smooth, adding water, 1 Tbsp at a time, until sauce is smooth.
  3. Add sauce to skillet, reduce heat to medium, and cook 2 minutes or until thoroughly heated. Sprinkle with cilantro and ¼ cup nuts.

  • 3 (3.5-oz) pouches boil in bag brown rice
  • 1 (5-oz) pkg baby spinach
  • 3 Tbsp less sodium soy sauce
  • 2 Tbsp sesame oil
  • 1 Tbsp sesame seeds

Side Dish Instructions

  1. Cook rice according to package directions. Stir in spinach, soy sauce, oil, and seeds, stirring until spinach wilts.
